We have pizza places 3 to a block here so I don't eat the chains pizza. My favorite pizza is in a wood fire oven, but you need a really good baker for that or you end up with an inedible burnt crust. A hot pizza oven will do.

Type of cheese depends on the toppings. Traditional cheese is an aged shredded mozzarella. Fresh mozzarella is also good, but is sliced. Cheesesteak pizzas have American cheese, Boardwalk pizza has provolone. Tomato pie has grated Parmesan or Romano, depending on the bakery. BBQ cheeseburger has cheddar. Spinach has ricotta...

The real secret is the sauce. Not too sweet, not too acidic or spicy.
