beignets

I've not had beignets since I went to New Orleans - when I was is college!


I went a farmer's market and there was a booth with fresh beignets - drool

does anyone have a good recipe they'd care to share?

Baked, this recipe can also be used for cream puffs.

What type of oil do you use?


I've seen cotton seed oil is used by some chefs.
