Texmati Brown Rice w/Chili's & Cheese

Here is a fabulous rice recipe my DIL shared with me. The kids love it, but easy on the chili's if you don't like the heat. My DH and I love it. Enjoy!


Basmati Brown Rice w/Chili's & Cheese


Heat oven to 350 degrees.
Butter lightly a 8x8x2 square casserole dish (2 qt)

1 cup Texmati Basmati Brown Rice (Von's, in a plastic container)
2-1/4 cups low sodium chicken stock
Pinch of salt
Pat of butter

Cook as directed (in a 2 qt. sauce pan, add all ingredients above, bring to boil, stir once, cover, cook approx. 45 minutes or until liquid absorbed.) Don't lift lid during cooking time unless necessary (rice protocol).
Let stand covered 5-10 minutes. Stir gently.

Add 1/2 cup light sour cream, 2 to 4 oz. canned mild diced green chili's (depending on heat desired), 3/4 cup shredded sharp cheddar cheese. Stir.

Pour into casserole dish. Top with 3/4 cup shredded sharp cheddar cheese.

Bake approx. 20 minutes or until cheese melted.


(Kid friendly! But 2 oz. of chili's is probably enough) Can also be made with white rice if required. Just follow the white rice cooking directions and add above ingredients. Yummy.

I'll be sure and thank her. This came from my DIL with 5 children, so I know her kids all like the rice recipe too.

This sounds delicious. My wife has been trying new recipes lately, so this will be a good one. I think we'll add some chicken to it.
