Turkey enchiladas

From our turkey on TG Day - I cut up left-over turkey and made my own enchilada sauce - and made turkey enchiladas.
It was so yummy!

It was on the radio today on what to do with the leftovers. -

Turkey on the bottom of a casserole - pour gravy over it then add the left over mash potatoes! I would of course add a shredded cheese.

Turkey Sheperd's Pie.

I'm going to remember that one!
